Air-fryer Caramel Apple Crumb Pie for One!
Caramel, apples and Fall go hand in hand. After all, Fall is when apple season is in full swing.
Today is also National Caramel Apple Day. Let’s celebrate by baking a Caramel Apple Crumb Pie!
I love to bake but baking for one can be a challenge. Most recipes are designed for 6+ servings. I don’t know about you but I don’t want to eat the same pie every day for a week. Well . . . if it’s a really yummy pie I might be up for that!
I guess there’s the option of freezing half but depending on the type, the pie might not freeze well. So what’s the solution?
A Pie for One!
Caramel Apple Crumb Pie
Steps –
1. Roll out refrigerated pie crust on a lightly floured surface. Invert pie pan on top of dough and cut about 1-inch from edge of pan to create an approximate 8-inch circle. Slide dough into the 6″ pie pan, making sure not to stretch or tug. Cover with plastic wrap and refrigerate.
2. In a small bowl, combine flour and brown sugar. Mix well, then add 1 tbsp butter and use your fingers to rub butter into flour until it forms a crumble. Cover with plastic wrap and refrigerate.
3. In a medium bowl, add apples, granulated sugar, remaining 2 tbsp butter and cinnamon. Stir making sure apple slices are evenly coated.
4. Pour apples slices in a medium skillet and heat over medium heat until butter melts, then cook, stirring often, until apples are tender, about 5 minutes. Reduce heat to low.
5. Preheat the air-fryer to 330°F. In a small bowl, add water and cornstarch and mix to form a slurry. Add to apples and mix. Cook until mixture thickens, about 1 minute. Remove from heat and cool 10 minutes.
6. Remove pie crust and crumble from refrigerator. Spread half of the apple mixture evenly into pastry-lined pie pan and top with caramels. Cover with remaining apples, then top with crumble.
7. Bake for 30 minutes until crumble is golden brown. If edges of pie crust start to burn cover with aluminum foil.
Let cool 1 hour before enjoying.
The melted caramel oozing into the apple slices tastes just like a candied apple but without the mess. The brown sugar crumble crust add the perfect amount of sweetness making this a pie you’ll want to make again and again!.
