Basket Grilled Vegetables

Ingredients
- 1 medium zucchini
- 1 medium squash
- 1 medium red pepper
- 3 tbsp olive oil
- 2 tsp McCormick Perfect Pinch Vegetable Seasonings (or seasonings of your choice)
Steps
Heat grill to medium heat.
Slice zucchini, squash and red pepper into 1/2” slices.
In a large bowl add vegetable slices, olive oil and seasonings. Stir until vegetables are well coated.
Place slices into grilling basket. Save left over oil to drizzle over veggies after cooked.
Grill 8 – 10 minutes or until reached desired softness. Rotate basket every few minutes to grill all sides of the veggies.
Remove from grill & put on a plate. Drizzle remaining oil and seasoning mixture over grilled veggies.
Tips
- You can use all zucchini, squash, or red peppers, or mix and match to your liking.
- To keep the vegetables from getting mushy, keep the slices to 1/2″ to 1/3″.
- Try to keep the slices uniform for even grilling.
- If you prefer wedges instead of slices, the cooking time is approximately the same.
- Use different seasonings if you prefer – 1/2 tsp to 1 tsp of each herb and add 1 tsp of salt.
If you’re looking to add a little more protein to your meal, you can also grill up some chicken or tofu to go along with your veggies. Just marinate your protein of choice in your favorite marinade for at least an hour before grilling.
