  • 2 oz (1/2 of an 8 oz package) cream cheese, cubed
  • 1/2 cup milk
  • 1/2 cup grated Parmesan cheese, divided
  • 1/8 tsp black pepper & salt to taste
  • 1/2 bag (6 oz) baby spinach leaves
  • 1/2 cup quartered cherry tomatoes (about 1/2 pint)

Steps

Add the uncooked tortellini, 1 cup of water, and a pinch of salt to the Instant Pot. Close the lid, set the valve to the sealing position, and cook on high pressure for 2 minutes. Quick release the pressure when the cooking time is complete. Drain any excess water if necessary and set the tortellini aside.

Set the Instant Pot to ‘Sauté’ mode and add the cream cheese. Cook until melted, stirring to keep from burning. Gradually whisk in the milk and stir in half of the Parmesan cheese and the black pepper.

Cancel Instant Pot setting and add the baby spinach. Stir to coat evenly with the cheese mixture.
