Delicious Ham and Potato Soup
This recipe is a piece of cake and can be whipped up in under 30 minutes. It serves a group of four, but if you’ve got more folks coming over, just double the recipe and you’re good to go!
Serves – 4
Ingredients –
- 1-3/4 cups peeled and diced red potatoes
- 2 1/2 tbsp diced celery or celery flakes
- 2 1/2 tbsp finely chopped onion
- 1/2 cup diced cooked ham
- 1-1/2 cups water
- 1 tbsp chicken bouillon granules
- 1/4 tsp salt or to taste
- 1/2 tsp ground white or black pepper, or to taste
- 3 tbsp butter
- 3 tbsp all-purpose flour
- 1 cup milk
- Freshly Shredded Cheddar Cheese (Pre-shredded cheese will work too)
Steps –
Combine the potatoes, celery, onion, ham and water in a stockpot. Bring to a boil, then cook over medium heat until potatoes are tender, about 10 to 15 minutes. Stir in the chicken bouillon, salt, and pepper.
In a separate saucepan, melt butter over medium-low heat. Whisk in flour with a fork, and cook, stirring constantly until thick, about 1 minute.
Slowly stir in milk as not to allow lumps to form until all of the milk has been added. Continue stirring over medium-low heat until thick, 4 to 5 minutes.
Stir the milk mixture into the stockpot, and cook soup until heated through.
Garnish with shredded cheddar cheese and serve immediately.
Tips and Variations
- You can use any type of potatoes you like, but red potatoes work best in this recipe because they hold their shape well and do not get mushy.
- If you do not have celery, you can use dried celery flakes as a substitute.
- You can add more ham if you like a meatier soup. You can also use bacon or sausage instead of ham.
- You can add other vegetables to the soup, such as carrots, corn, or peas.
- You can use vegetable broth instead of chicken broth for a vegetarian option.
- For a creamier soup, you can add more milk or cream.
- You can use different types of cheese to garnish the soup, such as Parmesan or Gouda.
