- 1/2 lb ground beef
- 1 red bell pepper, diced
- 1 cup cooked rice

Chop the red bell pepper, onion, and garlic. Make sure you have your cooked rice ready as well. I cooked my rice in the microwave while I prepped the vegetables.
Preheat your griddle or a large skillet over medium-high heat. Add the olive oil and let it heat up.
Add the ground beef, minced garlic and chopped onion to the griddle. Cook it until the ground beef is browned and fully cooked, breaking it apart with a spatula as it cooks. The onions should be translucent and fragrant when done. This should take about 5-7 minutes.
Add the diced red bell pepper to the mixture and cook for another 3-4 minutes until the pepper softens slightly.
Add the cooked rice to the griddle and stir everything together until well combined. Season with salt and pepper to taste.
Once everything is heated through and seasoned to your liking, remove the mixture from the griddle and transfer it to serving plates. Garnish with shredded cheddar cheese if desired.
