Enjoying the Best of Summer with Griddled Veggies

As the warm weather heralds the arrival of grilling season, there’s no better way to celebrate than by firing up the griddle and preparing some delicious, healthy Griddle Veggies. This dish is not only easy to make but also brings out the best flavors of summer, especially when you use fresh, home-grown vegetables. Why do dishes made with veggies we grow ourselves taste so much better?

Why Griddled Veggies?

Vegetables cooked on a griddle have a unique taste and texture that you can’t achieve with other cooking methods. The direct heat from the griddle caramelizes the natural sugars in the vegetables, giving them a slightly sweet, smoky flavor that’s simply irresistible. Moreover, griddling retains the veggies’ crunchiness, making each bite a delightful experience.

The Perfect Summer Dish

Griddled Veggies are versatile and can be served as a side dish, a main course, or even incorporated into other recipes such as salads, wraps, or pasta. The combination of zucchini, squash, and red pepper creates a colorful and nutritious medley that is sure to impress both your eyes and your palate.

Let’s Do This!

Griddle Veggies
  • 1 zucchini cut into 1/2-inch thick slices
  • 1 squash cut into 1/2-inch thick slices
  • 1 red pepper cut into 1/2-inch wide strips
  • 3 tbsp olive oil
  • 2 tsp McCormick Perfect Pinch Vegetable Seasonings (or seasonings of your choice)
  • 1/4 cup Grated Parmesan Cheese

Seal bag and shake until vegetables are well coated.

Place veggies flat on the griddle.

Cook for 10 minutes or until crisp-tender, turning occasionally

Remove veggies from griddle & put on a plate. Drizzle remaining oil and seasoning mixture over grilled veggies.

Sprinkle with cheese.

Tips for the Best Griddled Veggies

  1. Use Fresh Vegetables: Freshly picked vegetables have the best flavor and texture. If possible, use veggies from your garden or a local farmer’s market.
  2. Season Generously: The right seasoning can elevate your dish. Feel free to experiment with different herbs and spices to find your perfect blend.
  3. Don’t Overcrowd the Griddle: Ensure the vegetables have enough space to cook evenly. Overcrowding can lead to steaming rather than griddling, which may affect the texture.
  4. Turn Occasionally: Turning the veggies occasionally ensures they cook evenly and get those beautiful grill marks.

Serving Suggestions

Serve your Griddled Veggies with a sprinkle of grated Parmesan cheese for an added layer of flavor. They pair wonderfully with grilled meats, fish, or can be enjoyed on their own as a light and satisfying meal.

So, embrace the grilling season and treat yourself to the delightful flavors of Griddled Veggies. It’s a simple, healthy, and utterly delicious way to enjoy the best of summer’s bounty.
