Homemade Bread With a Twist

Homemade Bread!! Let’s Talk About It!! How fragrant it is as it’s baking. How wonderful a slice of hot fresh baked bread slathered with butter tastes. How fresh baked bread takes us back to a time when life felt “simpler”.

My Mommal made fresh bread. She would mix the ingredients, knead the dough, let the dough rise, knead and rise again then bake. It would take almost all day before that fresh baked bread was done. The first bite would melt in my mouth and the wait was almost unbearable.

My patience hasn’t gotten better with age. I think I might be even more impatient than I was when I was a kid. Maybe it’s the “instant gratification” times we live in. My point is, I don’t have the patience to wait ALL day for that first slice of fresh homemade bread oozing with butter.

Today is National Homemade Bread Day and I’m going to fill my kitchen with the warm, comforting aroma of homemade bread. As much as I would love to make bread by hand, it’s just not going to happen! I make my bread using a bread machine.

Background on Bread

Bread is full of symbolism around the world, across cultures and religions.

Bread is used in many phrases and takes on different meanings. Our jobs or activities that makes us money we call our “bread and butter”. We say “that’s as exciting as sliced bread” for something that thrills us and if something is dull we state “that’s as boring as white bread”. When someone knows “what side their bread is buttered on”, it’s because they know what to do or who to please in order to stay in a good situation or to avoid a bad one. I’m sure there are many more phrases “bread” is used in.

When we make homemade bread, we commit to using good ingredients and investing our time. We make it because we love the flavor. Homemade bread enriches the flavors of our meals. One of my favorite things is warm, homemade bread slathered with butter.

I decided to make homemade bread with a twist. A bit of a spicy twist.

South of the Border Bread

1 1/2 pd loaf – 12 slices

South of the Boarder Bread

Ingredients

  • 1 cup water
  • 2/3 cup frozen whole kernel corn, thawed
  • 2 tbsp margarine or butter, softened
  • 2 tbsp canned chopped green chilies
  • 3 1/4 cups bread flour
  • 1/3 cup cornmeal
  • 2 tbsp sugar
  • 1 1/2 tsp salt
  • 1 3/4 tsp yeast

Steps –

Measure and add liquid ingredients to the bread maker pan.

Measure and add dry ingredients (except yeast) to the bread pan.

Use your finger to form a well in the flour in the flour where you will pour the yeast. Yeast must NEVER come into contact with a liquid when you are adding the ingredients. Measure the yeast and carefully pour it into the well.

Snap the baking pan into the bread maker and close the lid.

Select the Basic Setting and choose crust color.

Press the “Start” button.

When bread machine beeps the cycle is finished, pull bread pan out of machine and allow to cool for a couple minutes.

Remove loaf from pan and allow to cool.

Butter and enjoy!!

Easy homemade bread with a bit of a twist. Great with Tex-Mex dishes!

Cook Time 2 hours
Total Time 2 hours 15 minutes

  • 2 tbsp canned chopped green chilies
  • 3 ¼ cup bread flour
  • ⅓ cup cornmeal
  • 2 tbsp sugar
  • 1 ½ tsp salt
  • 1 ¾ tsp yeast

Instructions

  1. Measure and add liquid ingredients to the bread pan.
  2. Measure and add dry ingredients (except yeast) to the bread pan.
