Instant Pot Sweet & Sour Chicken for Two

Ingredients –
- 1/2 cup apple cider vinegar
- 1/2 cup granulated sugar
- 1/4 cup ketchup
- 1 tbsp soy sauce
- 3/4 tsp garlic powder
- 1/2 tsp salt
- 1/2 cup cornstarch
- 1 pd boneless, skinless chicken breasts, cut into 1″ chunks
- 1/4 tsp salt
- 1/8 tsp black pepper
- 1/4 cup vegetable oil
- 2 large eggs, beaten
- Cooked rice
Steps
In a small bowl, whisk together vinegar, sugar, ketchup, soy sauce, garlic powder and salt. Set aside.
Pour cornstarch into a gallon-sized zip-top bag.
Season chicken with salt and pepper and place inside the bag of cornstarch. Close bag and shake until chicken is coated evenly.
Press Saute button on Instant Pot. Pour in oil and let heat 1 minute.
Working in batches, remove chicken pieces from bag and dip into beaten eggs.
Shake to remove any excess egg, then layer chicken evenly in hot oil on the bottom of the pot. Let cook, unmoved for 30 seconds.
Flip and cook another 30 seconds. Remove from pot and continue with remaining chicken.
Once chicken all the chicken pieces are cooked, pour sauce into pot and deglaze. Add chicken and turn to coat with sauce.
Close lid and set pressure release to Sealing. Press Manual or Pressure Cook button and adjust time to 3 minutes. When timer beeps, allow pressure to release naturally. Unlock lid and remove.
Serve this delightful Sweet & Sour Chicken over a bed of steamed rice or noodles, and garnish with some fresh green onions or sesame seeds for an extra touch.
