Instant Pot Tex Mex Rice

Ingredients

  • 1 pound ground beef
  • 1 16-oz jar corn & black bean salsa
  • 1 1/4 cup water
  • 1 cup uncooked white rice
  • 1 cup shredded cheddar cheese

Turn Saute setting on the Instant Pot. Add the beef and cook until no longer pink in the center. Turn Instant Pot off.

Add the salsa, rice and 1 1/4 cup of water.

Stir ingredients well.

Close lid and set pressure release to Sealing.
Press Manual or Pressure Cook button, pressure on normal and adjust time to 6 minutes.

When the timer beeps, allow pressure to release naturally, unlock lid and remove it. 

Top with cheddar cheese and serve when the cheese is melted.
