Instant Pot White Chicken Chili Recipe

White chicken chili is a delicious twist on traditional beef chili. It is lighter in color and has a milder flavor, making it perfect for those who want all the comfort of chili without the spice. This Instant Pot recipe is so easy to make and is ready in just 30 minutes!

Ingredients

  • 2 cups chicken broth
  • 1 1/2 (14.5 oz) cans cannellini beans
  • 1/2 pd boneless, skinless chicken breasts
  • 1/2 (16 oz) can creamed corn
  • 1/2 (4 oz) cans mild diced green chilies
  • 1/2 medium yellow, onion, peeled and chopped
  • 1 cloves garlic, minced
  • 1/2 tbsp chili powder
  • 1/2 tsp salt
  • 1/2 dried oregano
  • 1/4 tsp black pepper
  • 1/4 tsp crushed red pepper
  • 1/2 cup full-fat sour cream

Directions

Instant Pot White Chicken Chili

Combine broth, beans, chicken, corn, green chilies, onion, garlic, chili powder, salt, oregano, black pepper and crushed red pepper inside Instant Pot.

Close lid and set pressure release to Sealing.Press Manual and Pressure Cook button and adjust time to 30 minutes.

When the timer beeps, allow pressure to release naturally for 10 minutes and then quick release remaining pressure. Unlock lid and remove it.

Remove chicken from Instant Pot and shred using two forks.

Place chicken back into Instant Pot. Mix in sour cream.

Serve hot!!
