Welcome back to Well-Read Wednesday, fellow mystery and baking enthusiasts! Today, we’re diving into another delectable recipe from Joanne Fluke’s “Chocolate Chip Cookie Murder” – Lovely Lemon Bar Cookies.

Lovely Lemon Bar Cookies

With this recipe I did something a bit different!! While I scaled down the crust for smaller portions, I kept the original amount of lemon topping since I’m such a lemon lover!

Lovely Lemon Bar Cookies

Ingredients

  • 1/2 cup flour
  • 1/4 cup cold butter (1 stick, 1/8 pound)
  • 2 tablespoons powdered sugar
  • 4 beaten egg
  • 2 cup white sugar
  • 8 tablespoons lemon juice
  • 1 teaspoon zest (optional)
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 4 tablespoon flour

Directions

  • Preheat oven to 350°F, rack in the middle position.
  • Cut each stick of butter into four pieces. Zoop it up with the flour and the powdered sugar in a food processor until it looks like coarse cornmeal (just like the first step in making a piecrust). Spread it out in a greased 4.5 x 6.5 inch pan  and pat it down with your hands.
  • Bake at 350°F for 10 to 15 minutes, or until golden around the edges. Remove from oven. (Don’t turn off oven!)
  • Mix eggs with white sugar. Add lemon juice (and zest, if you want to use it). Add salt and baking powder and mix. Then add flour and mix thoroughly. (This will be runny–it’s supposed to be).
  • Pour this mixture on top of the pan you just baked and stick it back in the oven. Bake at 350°F for another 20 – 25 minutes. Then remove from the oven and sprinkle on additional powdered sugar.
  • Let cool thoroughly and cut into brownie-sized bars.

Trivia

  • Hannah brought these to the pizza party following Mike Kingston’s move, the day after Bill solved the double-homicide case and got his promotion. (I’m a good sister-in-law. I gave him every speck of the credit.)

Baking Tips

For the best results, remember to:

  • Use room temperature eggs for better incorporation into the mixture
  • When zesting lemons, avoid the white pith as it can add bitterness
  • Line your pan with parchment paper for easier removal of the bars
  • Let the crust cool slightly before adding the lemon mixture to prevent a soggy bottom
  • Wait until completely cool before cutting – refrigeration can help achieve cleaner cuts
  • Clean your knife between cuts for the most professional-looking bars
  • Store in an airtight container in the refrigerator for up to 5 days
