Serves – 4

Ingredients –

  • 1 pound red potatoes, quartered
  • 1 1/2 cup honey mustard salad dressing
  • 1 tablespoon chopped onion
  • 1/4 cup crumbled bacon
  • 3 chicken breast, cut up into 2″ cubes

Preheat your oven to 400 degrees F and spray a baking sheet with cooking spray.

In a large bowl or plastic bag, toss together the quartered red potatoes, chicken breasts, 1 cup of the honey mustard salad dressing, chopped onion, and half of the crumbled bacon.

Lay the mixture in an even layer on the prepared baking sheet.

Pour remaining honey Dijon mustard over ingredients and sprinkle the rest of the bacon crumbs on top.
