Ingredients
- ⅔ lb boneless skinless chicken thighs (or breasts cut into 1-inch chunks if you prefer)
- ⅓ to ⅔ clove garlic, finely chopped
- ½ cup honey BBQ sauce
- ⅓ can (about 7 oz) pineapple chunks, drained — reserve 1-2 tablespoons of the juice
- salt and pepper to taste
- ⅓ small red bell pepper, cut into 1-inch pieces
- ⅓ small yellow bell pepper, cut into 1-inch pieces
- 2 teaspoons cornstarch
- 1 cup cooked rice
- Chopped fresh parsley, if desired
- Crockpot Liners (optional)
Steps
Spray a 1.5 to 2-quart slow cooker with cooking spray or use a slow cooker liner. Place chicken in the bottom.


Top with garlic and honey BBQ sauce. Add pineapple chunks and reserved juice.
Cover and cook:
– On High for 2 to 2.5 hours
– Or on Low for 3.5 to 4 hours


With 45 minutes left, add bell peppers.
In a small bowl, mix cornstarch with 1–2 tablespoons water. Stir into the slow cooker. Cover and cook on High for the remaining time.
Serve over rice and sprinkle with parsley if you’re feelin’ fancy.

- I use crockpot liners to make clean up a breeze!
- I recommend using the Low setting on your crockpot for this recipe. When I’ve cooked it on High, the chicken tends to dry out a bit—could just be my crockpot, but Low works like a charm!
